  • 4 portions of salmon of 200 gr. each
  • 100 gr. of green olives
  • 2 cloves of garlic
  • 8 artichokes
  • 1 chive
  • 2 carrots
  • 100 gr. of shredded beans

  • a few sprigs of fresh thyme
  • Salt.

How To Cook:

  1. Remove the outer leaves from the artichokes, cut them into quarters and cook them in abundant boiling water with a pinch of salt until they are al dente.

How To Cook:

  1. We clean the squid by cutting the tentacles. Peel and chop all the vegetables and add them to a pot with olive oil.
  2. Place the onion, leek, pepper, zucchini, eggplant and carrot first. We let it be done on a high heat and we add the tentacles. Then we lower the fire and pour the white wine.
  3. Let the alcohol evaporate and add a teaspoon of sweet paprika. Let’s salt to taste. We let poche a quarter of an hour. In a separate pot pour the broth and add a couple of tablespoons of the sauce. We keep on low heat.
  4. To the rest of the filling we add a spoonful of bread crumbs. We remove and fill the squid with it. We close with chopsticks. Flour and pass through a pan with a little olive oil. We incorporate them into the sauce pot and keep a few minutes.
